Citrus Salmon with Avocado Salsa

Super Yummy and Healthy! And the miracle: Tristan liked it and Jake asked for seconds!! Both of them usually hate fish and you all know Tristan, he's just not a big fan of taking 5 min out of his busy day to eat. But they Loved it! It was really good and super easy. With out interruption (if that were possible) It takes about 20 min beginning to end!


Salmon:
Four 6-ounce salmon filets
1 1/2 tablespoons olive oil
4 tablespoons fresh orange juice
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon black pepper
1/8 teaspoon allspice
1/8 teaspoon cayenne pepper
Salsa:
1 large avocado, diced
1/2 cup diced red onion
1/2 orange,peeled and diced
1 jalapeƱo pepper, seeded, ribs removed, and diced OR 1/8 teaspoon cayenne pepper
2 teaspoons fresh lime juice
3 tablespoons fresh orange juice
2 tablespoons fresh cilantro, minced
salt and black pepper to taste

In a baking dish combine the olive oil and the orange juice.  Lay salmon in it and turn to coat.  In a small bowl combine the salt, onion powder, paprika, black pepper, allspice, and cayenne pepper.  Sprinkle over each side of salmon filets.  Set aside to marinate while you make the salsa.
In a small bowl combine the avocado, red onion, orange, jalapeno, and cilantro.  Season with salt and pepper to taste.  Cover and chill.
Heat a large skillet over medium-high and lightly coat with olive oil or vegetable cooking spray.  Add the salmon and cook for 4-5 minutes; turn and cook on the other side for 2-3 minutes or until fish flakes easily.  Serve with chilled avocado salsa.  Makes 4 servings.

Onion Straws


 Healthy? I think not, but they're positively delicious! Also a miracle occurred while making these, they actually look like the picture on the website. wow! They were really good, but I think when I make these again I will try a red onion instead of yellow. And prep time is more like 5-10 minutes, I don't know what they were smok'in when they said an hour. Thanks for setting this up! (plus it gives me something to do this summer!) --Whitney (clearly Chris had nothing to do with this:)

Recipe: Onion Strings

Ingredients

  • 1 whole Large Onion
  • 2 cups Buttermilk
  • 2 cups All-purpose Flour
  • 1 Tablespoon (scant) Salt
  • 1/4 teaspoon (to 1/2 Teaspoon) Cayenne Pepper
  • 1 quart (to 2 Quarts) Canola Oil
  • Black Pepper To Taste

Preparation Instructions

Slice onion very thin. Place in a baking dish and cover with buttermilk and soak for at least an hour.
Combine dry ingredients and set aside.
Heat oil to 375 degrees.
Grab a handful of onions, throw into the flour mixture, tap to shake off excess, and PLUNGE into hot oil. Fry for a few minutes and remove as soon as golden brown.
Repeat until onions are gone.
Eat before your family sees them.
Repeat with another onion, because they’ll be really mad they didn’t get any.
